Food Grade Lysozyme Hydrochloride (E1105) is a high-activity liquid antimicrobial enzyme solution developed primarily to prevent late blowing defects in cheese production. It provides reliable microbial control while preserving product quality, texture, and sensory characteristics.

Mix thoroughly before use. Dilute with water at an approximate ratio of 1:5 before incorporating into cheese milk. Recommended dosage: 8–20 mL (0.27–0.68 fl oz) per 100 L (26.4 gal) of high-quality milk. Add lysozyme prior to the addition of starter culture and rennet.
18 months from packaging date when stored in original sealed container. Store at 15–25°C (59–77°F), protected from light. Do not refrigerate or freeze. Enzymatic activity may gradually decline over time.
